Bukhara, the historic Silk Road city, is the cradle of the Bukharian Jewish community - one of the world's most ancient Jewish communities, from which much of today's Bukharian Jewish population in Israel and the US originates. In the old town, restaurants operate out of historic Bukharan homes, including Old Bukhara and Kabir Kosher Food, serving traditional Bukharian-Jewish cuisine - Bukharian plov and slow-cooked Shabbat dishes like oshi sabo.
